Food & Wine

Calabrian gastronomy is characterized by a simple cuisine. Currently, there are 269 products of the earth recognized in the national list of traditional food products. The recipes make a lot of use of vegetables and vegetables that grow abundantly on the entire territory: aubergines, courgettes, tomatoes, peppers, onions, asparagus, chicory, broccoli, turnip ... The typical cured meats of Calabria, have always been the true protagonists of the food: capocollo, pancetta, sausage and soppressata have obtained the PDO and are the most recognized charcuterie as well as the famous' Nduja di Spilinga.

A central role is occupied by bread, especially durum wheat. In mountainous areas pasta is almost always accompanied by veal meat sauce, in Aspromonte tasty sauces are prepared with goat meat, while in Sila wild game meat is used. Roast kid roasted throughout the territory, while in some areas you can taste the boiled goat.

The cuisine on the coast is characterized by the presence of fish: tuna, swordfish, anchovies and blue fish and also that preserved.

Among the dairy products the caciocavallo Silano, butirro and the Calabrian pecorino.

As for fruit, fig is part of the poor and typically peasant diet, also dried and carefully selected to prepare variety of products. The quality of the citrus fruit is linked to a combination of natural and climatic factors, in fact the cedar and the bergamot are cultivations that only fructify in Calabria. The Clementines are then an IGP product. In the woods you can pick black cherries, blackthorn berries, rose hip berries, strawberries, raspberries and blueberries, blackberries and sorbets to make jam.

Almost all the year the Sila offers a great variety of mushrooms: porcini mushroom silano sillo, the mushroom rosito, the vavusi, the galletti, the morels and many other varieties.

Finally, licorice also used for its healing properties.

Despite its ancient origins, Calabria can still be defined as a region that is still young from a winemaking point of view; however the environmental characteristics and the variety of the vines have determined a diversity that today represents the real richness of the Calabrian wine-growing: the most cultivated red-berry vines are currently the Gaglioppo, the nerello mascalese, the nerello cap and the greek black, while the vines white berries are less common. excellence is given by the white Greco which represents 90% of the white grapes, followed by Tuscan trebbiano, white malvasia, mantonico and garnish.

    This year we chose Calabria to spend the holidays, the choice was Falerna from Mr. Raffaele, a very kind and helpful person, he recommended us great places to dine and move in the area, also welcomed us very well upon our arrival by showing us the house there it made you feel welcome. The house is very nice we are 2 families of 4 people the space is not missing from the photos posted on the site you do not realize it is really spacious there is also a comfortable plate outside for barbecues, in the village you are very quiet almost every evening there was a gastronomic event or party with the locals we found ourselves very well welcoming and friendly and company although we were tourists.the sea is a few km but being on vacation there is no hurry, there are plenty of places to visit we hope to return next year because we found ourselves really well. The sigor Raffaele also produces a good olive oil I recommend buying. What to say W LA CALABRIA and greetings to Raffaele .

    Abbiamo lasciato la proprietà da poche ore è già ci manca il fresco di Falerna. Raffaele proprietario ha dato molte informazioni .... Il venerdì sera aperitivo all agriturismo Mendicino veramente fantastico ....panorama mozzafiato... Che dire eravamo titubanti sulla posizione della casa (15 min buoni da falerna marina)Ma invece ci siamo trovati bene ,sopratutto perché dopo una giornata di mare trovi il fresco La casa ben tenuta su 3 piani...ed anche ben accessoriata. Be che dire vacanza super positiva Grazie Raffaele
