Holiday Inn & Suites Shin Osaka
Worth paying a little extra for this hotel as it really was excellent, surprised to have a well-equipped kitchenette as well as breakfast included. Room was big, modern and comfortable, excellent facilities (TV, aircon), plenty of plugs etc, really nice bathroom (separate sink area / wetroom bath and shower and separate toilet) - including a bluetooth speaker in the mirror! Breakfast was good - some western options (eggs, bacon, cereal etc) as well as Japanese (miso soup, rice etc). About 20-25 mins walk from Shin-Osaka station (where the Shinkansen stops) and plenty of convenience stores around, but it's a train / subway ride if you want to go into Osaka proper.

Osaka stay
We extended our stay a night because of how comfortable our rooms were! It is a 10 minute walk from Shin-Osaka which is a little long if you were pulling luggage, but perfect for a home away from home base. We had a room with a kitchen, our own washer/dryer combo, and a sitting area. The staff was friendly and helpful, everything was clean, we have no complaints and will stay here again.

So much room!
Stayed in the king suite, loved the in-room laundry, large bathroom (high tech mirror for lighting), and the kitchen. Everything seemed very modern. Walkable (~10 mins) to Shin-Osaka for bullet train connections. In a quiet neighborhood. This was our base for the week for both Osaka and Kyoto/Uji.
